Everyone knows I don’t really like cooking. While I do cook at times, I always try to google around and find myself the easiest recipe. I don’t like deep fried. I don’t like to have a long list of ingredients to prepare – hey I tend to forget, and it makes me dizzy when I need to keep referring back to the list.
When I was reading about this cook off, I sort of got attracted by one of the recipes created by Chef Tafari Campbell from Maryland. It’s called Pan Roasted Glazed Rockfish with Peas and Carrots. The list is not long, and the instructions seem to be simple. And best of all, it sounds healthy. :)
I probably have to make some changes to the recipe, especially the fish itself, since rockfish is local in the U.S. but probably not here in Penang. I’ve always preferred to have fresh meats, especially seafood, at the wet market near my place instead of those frozen and imported ones from the supermarket. I notice it’s so much fresher! And that’s one of the many benefits of cooking with the domestic seafood. Fresh, fresh, and always fresh!
The site is currently having a competition for readers to vote for their favourite recipe using domestic, sustainable seafood from the top five that the judges have chosen. Winner will get a “Trip to New Orleans” prize package including two Southwest Airline roundtrip tickets, hotel accommodations, dining experiences and so on. I believe it’s only for the U.S. residents but I don’t mind. I’ve got myself a simple and healthy recipe here. I have been wanting to try this ever since I read about a similar post somewhere on a lazy recipe blog and on Shu-Yin’s blog. But I never had a good chance until last Friday…
I was all alone at home. Everyone was out and away and won’t be back until evening. I couldn’t believe that I still enjoy so much of the quiet time that I have alone. I had the whole house! :D
When it was about lunch time, I started looking for some possibly good ingredients for my Lazy Girl Pizza. I settled with some Taiwan sausages and mixed vege.

So as the name suggests, it’s supposed to be lazy. Lazy = easy. First layer, tomato sauce/ketchup. Then place the sliced Taiwan sausages and mixed vege nicely and evenly on top. You can use any other suitable ingredients that you have in hand. Think about what Pizza Hut does. Tuna, beef, bacon, chicken… you name it!
Next, as I don’t have any cheese at home, I tried putting mayonnaise on the last layer instead.

Put in the oven, bake for a good 10-15 minutes at around 200℃. And you’ll have this!

I wanted to take a clearer photo but my camera’s battery went flat at this time, so did my tummy. :D Believe it or not, it was actually very yummy! A bit too sour at the end, I think I put too much of ketchup but I think it’s OK and this will be one of my favourite lazy recipes from now on. :D
I have been having this phobia for quite a while – like a few months or so. I didn’t really pay much attention to it but I think it’s getting more serious lately.
I don’t normally cook and am always reluctant to touch anything related with ‘fire’ or ‘heat’, for instance the gas stove, or even the microwave oven. I’m probaby too ignorant on the way they function but I never feel safe using them.
Ever since I had Xiao Bi I always prepare her food myself. Cooking dinner for her, and preparing her breakfast the night before. The cooking process is not so tedious and it normally takes only like a good 10-20 minutes. For her breakfast, I normally use the steamer on gas stove and steam for about 15 minutes to get the meat cooked.
And here is the thing. Instead of wandering around doing nothing during the 15 minutes, I’d normally walk away or go to my room to continue my work. And I tend to forget about the cooking. It happened many times and everytime the water in the steamer would dry off. The worst that I’ve got was leaving there for a good 2 hours, and I even went out to the town to get something before I came back and realised that it was still cooking!
Ever since then, I’ve got this phobia or whatever you call it, and I constantly check on the gas stove eventhough I’ve just turned it off a few minutes ago. I’d get off the bed in the middle of the night and check if it’s REALLY turned off. I’d double and triple check it before I leave the house. I’m always worried that I’ll blow off my house!!!
I think – and I believe, that I’m under too much pressure. Somebody help me out!!!
DARL’ was scheduled to work from 4:30pm onwards today. During lunch hour, I noticed that mum had only prepared vege – mostly vege. Being an omnivore, I asked DARL if he want to fry the beef he bought yesterday, and save some for him to bring to work. He gladly said OK. Yeah! :D
So we started to prepare the necessary ingredients for the dish. Since I am never a good cook, he gave the instructions in the kitchen. :D My tasks were cutting the beef into slices and preparing the garlic and small onions. Here they go.


He then marinated the beef in soy sauce and pepper. I think he might have added something else but I am not so sure. I was busy playing with my little niece. :D

About 20 minutes later, he started heating up the wok. As beef doesn’t require to be cooked for long, It took only about 15 minutes for us to get this…

And this was when DARL said:
“Eh, I forgot to add ginger and corn starch.”

Nevertheless, it still tasted good. :D
