Sweet Cucumber Cold Dish.

I notice that whenever the weather is hot, I tend to crave for sweet and sour food, with a bit of spicy. Most of the time this is when I have bad appetite and badly need something that can make my taste buds excited. lol.

With the uncertain hot-cold weather lately, I’ve been craving for a nice, rich and sour Tomyam soup since weeks ago. Well I’ve actually had a few bowls since then. There are a few of my favourites in town and I’ll blog about them when I get to shoot some photos – you know, whenever that bowl of heaven arrives, I could never remember that I need to shoot photos.

I used to read up a Chinese blog by a student who lives overseas and cooks. I’ve tried a few of her dishes. I won’t say that they turned out very tasty but it’s really timing saving for a lazy ass like me. :D Judging at the amount of time invested, I’d say they tasted good. :D

I haven’t been following it for a while and yesterday I just happened to click it in my bookmark. And the post on top attracted my attention. Sweet Cucumber Cold Dish. How perfect for a hot weather! For those who don’t read Chinese, here is the translation (I hope I do it correctly :D).

Ingredients:

2 Japanese Cucumbers

2 Tablespoon of tiny rock sugar (I used sugarcane rock sugar and crushed them into real tiny pieces)

1/2 Teaspoon of salt

Instructions:

1. Wash and cut the cucumbers into small cubes. Splash in the salt and wait for half an hour. Drain the water. Splash in the rock sugar and let it stay.

2. When water starts coming out, do not drain it but mix well with the cucumber. Put in the refridgerator for 6 hours and ENJOY!

I think this is a variation of the one with vinegar but I was too lazy to look for more. So I just settled with this and it turned out pretty well. Easy enough for someone like me. :D
